Pasteurized milk, on the other hand, reduces all microorganisms. Contamination after pasteurization allows pathogens to thrive. Raw milk sours safely. Remember all the old recipes calling for sour milk? Our great grandmothers knew all about it. <br /><br />Then there is nutrition. Anyone interested in that? The enzymes in raw milk are all available. In pasteurized milk, less than 10% are available. The calcium in pasteurized milk is not even available to us because the enzyme, phosphatase is so greatly reduced that our bodies cannot absorb the calcium. I could go on and on....
